Saying that AI is engineering and not science is like saying quantum mechanics is physics and not mathematics. I don't find reasons to think science and engineering are mutually exclusive.
AI is both, a scientific discipline and an engineering technology, depending on which perspective you take and at which level you work. Researchers working on creating silicon structures that could resemble biological neurons wouldn't call their work "engineering," but they for sure wouldn't have a problem in calling it AI.
I agree with you on the importance of language. It's one of the distinctive features that makes us humans. I've talked about this here. However, I disagree that emotions are "like vision, hearing, etc." I don't think we can imbue AI with emotions following the same strategies we're using to create perceptual systems.
