I'd suggest to look up Ryan Murdock and Katherine Crowson's work (on Twitter). From there, you'll find recommendations of other artists (there are more than you may think!).

Also, if you're very interested in the tech behind, right now the state of the art is CLIP + diffusion models. Look up Katherine Crowson for that, too!
